The grading

What UMF 25+ and MGO 1200+ mean.

Two labels describe the same honey from two angles. MGO measures methylglyoxal in milligrams per kilogram. UMF is the New Zealand grading derived from it. The higher the number, the rarer the harvest — and this jar sits at the top of the scale.

As stated on the product label.

Why is Manuka honey thicker than other honey?

Manuka honey naturally carries a high level of methylglyoxal and a dense structure. That is why it stays creamy and runs from the spoon more slowly — a sign of its natural character.

The product

A jar worth reading the label for.

This is Manuka honey in its most straightforward form: raw, unpasteurised, and graded UMF 25+ with an MGO of 1200+. Nothing is added and nothing is heated out of it — just honey from New Zealand's Manuka bush, jarred close to how it was harvested.

On the spoon it is dense and slow to move. Expect a deep amber colour, a texture closer to soft cream than to syrup, and a taste that sits somewhere between malt and caramel — sweet, but with a savoury edge that keeps it from turning cloying.

A little on the spoon. A great deal on the palate.

That intensity is the reason a single spoonful goes a long way. Stir it into warm water, spoon it over yoghurt, or let it finish a plate of cheese and figs. It holds its own against strong flavours, which is more than most honey can say.
